Browned Butter Rolo Cookies

Since it has been so darn cold lately all I want to do is stay inside. Obvs. I think that's most peoples response to the cold. Well, what better thing is there to do than bake--making the apartment nice and cozy warm, making the neighbors jealous because of the delicious smells. Right?
I wanted to bake a little somethin for work's holiday party so I dug in my freezer and found a bag of Rolos--It was one of those impulse buys, Halloween candy went on sale and I totally forgot I had them. Jackpot.
I thought they would be best paired with a little browned butter, so I remade my old chocolate chip cookie recipe. Success and etc.  


Ingredients
Adapted from my original chocolate chip recipe.

-3/4 cup browned butter, softened 

-1 cup firmly packed brown sugar
-1/4 cup sugar
-1 egg
-1 1/2 tsp vanilla
-2 cups flour
-2 tsp cornstarch
-1 tsp baking soda
-1/2 tsp salt
-2 cups rolos, chopped

1. Brown butter over the stove, transfer to bowl, and refrigerate until firm, then set out until room temp and softened.

2. While waiting for the butter, combine dry ingredients, whisk or sift and set aside.
3. In your stand mixer or by hand, cream butter and sugars. Add egg and vanilla until just mixed in.
4. Gradually mix in the dry ingredient mixture.
5. Stir in rolo pieces.
6. Chill dough for two hours.
7. Preheat oven to 350ยบ F. 
8. Make 9 tall cookie dough "balls" on a cookie tray with parchment paper.
9. Bake for 8-10 minutes or until the edges start turning golden brown.
10. Remove from the oven and let them rest on the cookie trays for 3ish minutes. Transfer too cool on wire racks. And share.

This weekend I'll probably be laying low. Maybe baking?

  1. Why did I never think to put Rolos in cookies? Amazing. I've come across a number of recipes lately using brown butter, but I have yet to try it. I hear it's super yummy... just like these look! ;D
