Ahoy! I'm Red!

Hello All!

I arrived in Florida yesterday afternoon, but it already feels like I've been here forever! In a good way, of course!

I don't have much time to blog, but here is a little sneak peak to what I've been up to!
Let's just say I'm already sun-kissed.


Quite possibly the best fish and chips and fish taco I've ever had from The Golden Lion in Flagler Beach.

I'm so happy here because I'm about to feast on...

the best pancakes known to man.
They're the blackberry pancakes from Cracker Barrel.

They are surprisingly delicious.

Anodyne, you are mine.

Today has been a pretty relaxing day so far! 
I had the day off so when I woke up bright and early (let's face it...I can't sleep in even when I have days off...If you can, please teach me, worked out and then I decided to spend my afternoon at Anodyne Coffee in Bayview.


I am ashamed to say that I have never been to Anodyne before. I know, I know, I have been meaning to come, but living over in West Allis (Shhhh, I don't want to talk about it) doesn't make it very convenient for Liser.


I will be starting to head this way more often because first of all the lad that took my order was very pleasant and second it is SO much quieter than Alterra. 
If you know me, you know that I love Alterra, but come on and quiet down, capisce?

Anyways, I had a few things to do on the machine, including chatting with you, no big deal.



I ordered an Americano and a sesame bagel.
The Americano was perfect. Strong, but not so strong as to give me the jitteries. Ahem...Alterra. Another point for Anodyne.

Also, if you want a way to my heart, buy me a coffee and a bagel. 
I love bagels.

So right now I'm perched at one of the tall tables chatting with you and admiring the Anodyne environment.


I'm not sure what's on the agenda for the rest of the day, but I'm content right now. ;)


Swing over to Anodyne to have a coffee or tea and chill out for a bit.
Make sure you get one of these little cardies for future visits as well. I know I'm going to need it. :)

Crunchin'

Lately it has been a lot about food here on Making Life's Lemons and I do apologize. I have been pretty busy working on a couple of different things.
I'm planning on a MKE post later this week. I have a day off! Woot!

For now I have a delicious dinner idear for you!


On Sunday night after spending St. Pattys day with friends and libations the only thing that I wanted was a Crunchwrap Supreme.

Well I didn't want to drive anywhere so I figured that I would just throw it together at home. It's been all over Pinterest so it can't be that hard.

First I chopped up some peppers and onions and threw them in a pan with a little olive oil and let them brown a little.

Then I added chicken and taco seasoning. Once the chicken was fully warmed I threw it on a tortilla with some cheese.

To make the crunchy middle I broke a hard shell taco tortilla in half and placed it on top of the chicken cheesy mountain. 

I topped it with lettuce, tomato, salsa, and some greek yogurt.

Then I threw another tortilla on top of that.
Yes, yes, I know that this is not a Crunchwrap shape, but I only had the small tortillas.

I gently placed it in the pan and let both sides get golden brown. Only let it lightly brown so that the middle does not get soggy.


Scoop yourself some extra salsa and a little guacamole and get ta crunching'.

New Gear-New Ball Game

The KitchenAid that I was looking at was on mega-discount at Kohls AND I had an extra 20% off. 
Unfortunately, I just looked and it is no longer on sale.
Sorry, friends!


As you can see, I'm so excited my neck is exploding...?

Of course I needed to bust it out and start baking something right away.

I made the Salted Chocolate Chip Cookies for my family.
They always complain that I bake for work or events and never leave anything at home. Whiners. 
Recipe is from this post, but omit the Nutella.

Isn't this great news??
This has definitely upped the ante.

I just never thought that I would have that. I feel so special. I know that I'm only taking one step at a time with the blog, but every step helps. :)

Another exciting thing is that the blog hit 5000 overall views on Tuesday. Honestly, that is all thanks to you guys, my wonderful friends, family, and strangers I feel like I know you as well! that read about me romping around in this amazing city.

Mocha Cupcakes with Espresso Buttercream Frosting

Last night my wonderful friend Meredith had a bunch of us girls over to her place to watch the Bachelor Final Rose episode.

It was surely a girls night. Just picture 8 girls eating, drinking wine, and watching the Bachelor. 

It was awesome!

We all brought a little something to eat and I though it would be the perfect time to finally try out a delicious looking Mocha cupcake recipe.

Feast your eyes on...


Mocha Cupcakes
Should yield about 12 cupcakes (a little more actually)
Recipe adapted from Brown-Eyed Baker

1-1/3 all-purpose flower
1/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup whole milk (I used 2%)
1/2 cup strong brewed coffee
1-1/2 teaspoons espresso powder
1 teaspoon vanilla extract
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg, at room temperature (I used a cold one...woops!)

Directions
1. Mix espresso powder into the brewed coffee until dissolved and set aside to cool.
2. Preheat oven to 350°F. Line standard-sized muffin tin with liners.
3. Whisk together flour, cocoa powder, baking powder, baking soda, and salt.
4. Beat butter and both sugars together on medium-high speed until light and fluffy, about 2-3 minutes. Add the egg and beat until combined. In a measuring cup combine milk, coffee/espresso powder mixture, and vanilla. 
5. Slowly add the flour mixture and alternate adding between the coffee and flour mixture.
6. Divide the batter evenly (like I said above there might be more than 12 cupcakes). Bake for 17-20 minutes or until the babies pass the toothpick test.
7. Cool completely before frosting.

The delicious looking product!

Espresso Buttercream Frosting
Makes enough for 12 cupcakes
Also from Brown-Eyed Baker

1 cup (2 sticks) unsalted butter, at room temperature
2-1/2 cups powdered sugar
1-1/2 teaspoons vanilla extract
1-1/2 teaspoons espresso powder

Directions
1. Mix the espresso powder into the vanilla and set aside.
2. In electric mixer, whip the butter on medium-high speed for 5 minutes, stop once to scrape bowl.
3. Reduce speed to low and add the powdered sugar a little at a time. Wait until it is mostly incorporated before adding more.
4. Once completely increase speed to medium-high and let whip until fluffy, about 2 minutes.
5. Add espresso and vanilla mixture and continue to mix on medium-high until it is completely incorporated.
6. Fill pastry bag with frosting and pipe over cooled cupcakes.

I show you this only because I love the way whipped butter looks.

The frosting should look like this.

After frosting I added a little something thanks to some extra espresso powder and Trader Joe's. :)
