Cinco de Mayo Salsa

This weather this weekend was a lot more beautiful than the forecast. Thank goodness!

Because it was so beautiful out a few of my friends threw a little Cinco de Mayo shindig.

I decided whip up a little something for the party and I wanted to share it with you. 
Sorry it's after Cinco de Mayo, but believe me, this salsa is always good.


Black bean, Corn, Avocado Salsa
This one is an original. ;)

5 Roma tomatoes (I always use Roma for salsa because they are more firm)
1/2 onion
15oz can black beans
1 cup sweet corn (if using a can use 15oz)
2 avocados
Few sprigs fresh cilantro
Adobo seasoning (optional)

Thoroughly rinse beans and corn and put in mixing bowl.
Chop tomato, onion, avocado, and cilantro to desired size (I like mine chunky) and add to bowl. Sprinkle on some of the seasoning. 

Give it a little mix with a soft spatula.

And tada!! Easy. Peasy.



It's super easy and extremely refreshing.
